Just thinking about them makes my mouth water. Chinese dumplings are actually inexpensive and easy to make at home. I have a Chinese dumplings recipe you will love. Today I am sharing, with permission, Hsiao-Ching Chou’s pork cabbage dumplings. Chou is an award-winning food journalist, cooking instructor and author of CHINESE SOUL FOOD (Sasquatch Books; February 2018; Hardcover- affiliate link). This cookbook offers a collection of 80 classic Chinese soul food recipes that Chou grew up eating in her home, her family made at their restaurant and that are straight-forward and easy to make at home.     Chinese dumplings, also known as “jiaozi”, are a popular dish in Chinese cuisine known for their versatility and delicious taste. They can be steamed, boiled, or pan-fried and are often filled with a variety of ingredients such as meat, vegetables, and seasonings.

    Chinese Dumpling Recipe With Pork And Cabbage

    According to Parade Magazine, Chinese cuisine is the most craved ethnic cuisine that Americans find themselves reaching for at the dinner table. After tasting this Chinese pork dumpling, I am sure you will be craving them often! Her pork and cabbage dumpling fillings are so full of flavor. You are going to want a large bowl of these soul dumplings just for yourself!

    Start with a clear work surface and gather your ingredients. If you have trouble finding any ingredients, try Asian grocery stores or order online.

    Pork and Cabbage Chinese Dumplings

    MAKES ABOUT 45 TO 50 DUMPLINGS

    Pork Cabbage Dumplings Ingredients:

    • 1 batch Dumpling Dough (recipe in Chinese Soul Food or store bought dumpling wrappers)
    • Soy-Ginger Dipping Sauce (recipe follows)
    • 1 pound ground pork
    • 2 1/2 cups loosely packed finely chopped Chinese cabbage (Napa cabbage)
    • 2 tablespoons soy sauce
    • 1 stalk green onion (or a few Chinese chives)
    • finely chopped 1 teaspoon minced ginger
    • 1 teaspoon sesame oil
    • 1/4 teaspoon white pepper powder

    1. Make the dough according to the recipe. While the dough is resting, make the Soy-Ginger Dipping Sauce and set aside.

    Or if you don?t have time to make your own wrappers, you can use store-bought wonton wrappers or gyoza wrappers. There are many brands available, and most stores these days sell at least one type of dumpling wrapper. At Chinese markets, you can usually find thin, medium, and thick Chinese dumpling wrappers. The thicker ones are better for pot stickers, because they won?t tear as easily.

    2. To make the filling, in a medium bowl, combine the pork ground meat, cabbage, soy sauce, onions, ginger, oil, and pepper, and mix well. Set the filling aside.

    3. Fill the wrappers with the prepared veggie and pork filling.  (Place a spoonful of filling in the center of the wrapper. Dab water on the edges of the wrapper to help seal. Press wrapper shut.)

    Place your homemade Chinese dumplings on a prepared prepared baking sheet covered in parchment paper and lay plastic wrap over the top of them while you are working to fill up the tray.

    4. Boil, steam, or panfry the dumplings, and serve with the dipping sauce.

    Soy-Ginger Dumpling Dipping Sauce

    MAKES ABOUT 1/3 cup

    • 1/3 cup soy sauce
    • 2 tablespoons rice vinegar
    • 1 stalk green onion, finely chopped
    • 1 teaspoon minced fresh ginger
    • 2 large cloves garlic, finely chopped or crushed
    • 1 tablespoon chopped fresh cilantro
    • 1 teaspoon chili sauce (optional)

    In a small bowl, combine the soy sauce, vinegar, onions, garlic, cilantro, ginger, and chili sauce. Set aside on the counter for at least 30 minutes, if possible, to let the flavors meld together. The longer the mixture rests, the more intense the flavor becomes. You can store the dipping sauce in a sealed container in the refrigerator for up to 1 week.

    The dumpling sauce is a very important part of enjoying the traditional Chinese dumpling. Don’t skip it!|

    Our favorite cooking method is the pan fry to a golden brown. If you should happen to have any Chinese pork dumplings left over, they store well in freezer bags. But good luck with that! My family members duke it out for the last ones! Dumplings are a traditional dish and they are often served at Chinese new year, though they are popular year round too!
