    My family enjoys potato chips, and I occasionally indulge by buying them. One evening, the idea came to me to create this dish—and it was a big hit with everyone! This BBQ chip-encrusted salmon is a foolproof way to get my family to enjoy a nutritious meal, ensuring everyone will relish every bite.

    There’s nothing quite like watching your loved ones leave the dining table with empty plates, not because they had to clean, but because they truly enjoyed the meal. No shame in admitting that I enjoy those delicious chips too, especially after creating what my husband calls the best salmon he’s ever had.     How To Prepare Chip Crusted Salmon Fillets

    In just 30 minutes, you can go from starting to cook to enjoying your chip-encrusted salmon at the table. All you’ll need is a baking sheet. For easier cleanup, consider using aluminum foil or parchment paper, although they aren’t essential. Also, you can skip olive oil since cooking skin-side down allows for natural oils to remain.

    Ingredients
    1 lb. fresh salmon fillet
    1/2 cup milk
    2 cups BBQ (mesquite or similar) kettle-cooked potato chips

    Directions

    1. Preheat the oven to 375 degrees F.
    2. Rinse the salmon, pat it dry, and then cut it into four even slices.
    3. Pour milk into a shallow dish.
    4. Place the BBQ chips in a large bowl and crush them using the bottom of a measuring glass. Alternatively, you can put the chips in a Ziploc bag, seal it, and crush them, or use a food processor for a few seconds until you have coarse crumbs.
    5. Dip each salmon fillet into the milk and then coat with the crushed chips, focusing on the flesh side and avoiding the skin side.
    6. Lay the salmon fillets skin-side down on a baking tray. Feel free to top with any leftover chip crumbs.
    7. Bake for 15 minutes. Serve as soon as it’s done. The seasoning won’t be necessary since the chips provide ample flavor.
